Cookies N Cream Pie

On the ninth day of Christmas my true love gave to me nine ladies dancing, eight maids a milking, seven swans a swimming, six geese a laying, five golden rings, four calling birds, three French hens, two turtle doves and a Partridge in a pear tree.

Day 9: Cookies N Cream Pie

This recipe is just as easy as the others, it just takes a little more time. If you’re making this for a party, make it the day before!

Cookies N Cream Pie

1/2 C cocoa powder
1/2 C pitted dates
1/2 C almonds
1/2 C walnuts
1 t vanilla

1 C cashews (soak for 30 minutes in hot water)
1/2 C pitted dates
1/2-2/3 C filtered water
1-2 T ground flaxseed
1 t vanilla

For crust: Combine all ingredients in a food processor until it starts to stick. Set aside 2-3 T for topping. Press into 8 inch pie dish. Freeze 10 minutes.

For filling: Combine all ingredients in high speed blender. Add water in 1/4 C increments until smooth. Pour into crust, sprinkle crumbs on top, freeze 3-4 hours.
