James and I are sandwich lovers, especially grilled sandwiches. Our favorite weekend meal is lunch because it means grilled sandwich, homemade potato chips and soup. We used to eat grilled avocado sandwiches, but since we’ve started eating locally, we don’t eat avocados. Sad. A few weeks ago, we were driving in the car talking about what we would eat for lunch when we got home and I randomly thought of a spinach, hummus and tomato grilled sandwich. The rest is history.
Seriously though, this sandwich is hands down the best I’ve ever made. We’ve had it at least three times since then. The best part? You can use any veggies you have on hand AND it’s all local!
The Best Veggie Sandwich (Makes 2) 4 pieces of bread Olive oil 4 T Hummus 3-4 slices of tomato 1 small onion (sliced) 1 small zucchini or whatever other veggie(s) you have on hand (sliced thin) 1/2-1 C spinach 1. In small frying pan saute onion approximately 5 minutes. Add water as needed. 2. Add squash or other veggies. Cook 3-5 more minutes. 3. Add spinach and cook until spinach starts to wilt. 4. Lightly spray or rub olive oil onto a medium frying pan. 5. Spread approx. 1 T hummus on 1 side of each piece of bread. 6. Begin sandwich assembly: lay 1 piece of bread (hummus side up) in pan. Add tomato and other veggies (save half the veggies for the other sandwich). Place the other piece of bread on top (hummus side down). 7. Cook until lightly browned on both sides. Repeat for other sandwich. 8. Serve with potato chips, tomato soup, or your favorite side!
