Apple Chia Muffins

On the eleventh day of Christmas my true love gave to me eleven pipers piping, ten lords a leaping nine ladies dancing, eight maids a milking, seven swans a swimming, six geese a laying, five golden rings, four calling birds, three French hens, two turtle doves and a Partridge in a pear tree.

Day 11: Apple Chia Muffins

I’m a huge fan of muffins and breads because they double as a treat and breakfast! I can justify muffins for breakfast especially when they have apples and chia seeds in them! They pair perfectly with a smoothie or a cup of coffee.

I made these for the first time a few days ago.  I tried to make them a couple of weeks ago, but in the midst of shredding the apple, I also shredded my finger so I called it quits. In fact, I didn’t use the mandolin slicer for a while after that. Now, I use the protective handle so I don’t make the same mistake again.

Apple Chia Muffins

1 1/3 C whole wheat flour
1/2 C oats
1 T chia seeds
1 T baking powder
1/2 t cinnamon
1 C coconut or almond milk
1/2 C brown sugar
1 t vanilla
1 md. apple, grated

1 T oats
1 t chia seeds
1 t brown sugar
Sprinkle of cinnamon

Preheat oven to 375. Grease muffin cups. Combine flour, oats, chia seeds, baking powder and cinnamon in large mixing bowl. Add milk, brown sugar and vanilla. Stir until combined. Stir in grated apple. Fill muffin cups 2/3 of the way.  Combine topping ingredients in small bowl.  Sprinkle on muffins. Bake for 25-30 minutes.  Makes approx.  12 muffins.
